#veganmofo week plan September 15

Oh, thank goodness it is fall-like weather this week. I just can't eat soups and such when it's warm out. This chilly weather has me craving CHILLI, which I will make a big pot of on Monday and likely reheat for lunches all week.

I guess I am on a Sarah Kramer (#govegandotnet) kick this week, three recipes are hers.

Sunday:
Rest day
Late afternoon baked potatoes
Baseball game in the evening

Monday:
Run 3 miles
Cross train class at noon
Dinner is chilli and cornbread muffins. Will likely crock pot this.

Tuesday:
Run 2 miles
Gym/yoga class with Mia
Dinner is ginger seitan.

Wednesday:
Run 4 miles
Cross train class at noon
Dinner is black bean and sweet potato burritos.

Thursday:
Run 2 miles
Gym with Mia
Choir rehearsal, so dinner on the go is tempeh "chikn" salad. Last week I didn't eat prior to rehearsal, and my belly was GRUMBLING!

We are headed up to Ocean City next weekend, so I will do my long run Saturday. 7 miles on the boardwalk! It looks like it will warm up by the weekend. A new vegan restaurant, My Nature, opened up there this past spring, which I am anxious to try.

How did mothers ever express their love before selfies?

18 years ago, tomorrow, I gave birth to my incredible daughter, Mia.
I have so much to be thankful for, but most of all, I am really fortunate that she is in my life. Not only is she a beautiful young woman, but she is also wicked smart, friendly, confident, talented, and kind.
We always find fun and laughter!

#veganmofo week of September 8

This last week was the first week of classes, so I admit, I didn't adhere well to my plan from last week.
Here is an adjustment, and next week's plan.
I already have the ingredients to many recipes I planned for last week. Also have to plan for some celebrations this week. Both Mia and Rob have birthdays!

Friday 9/6:
Rest day. I worked my body too hard this past week and this is well deserved!
Watermelon and veggie burgers on the grill

Saturday 9/7:
Ren Faire
Lots of walking
I'll likely get falafels- yum!

Sunday 9/8:
2miles
Eggplant ciabatta sandwiches

Monday 9/9:
Mia's birthday!
3.5 miles
Sexy vegan Eggplant salad

Tuesday 9/10:
Tattoo time
Out for sushi to celebrate Mia's birthday
2 miles

Wednesday 9/11:
4.5 miles
Happy Herbivoire Vegan Crab cake sandwiches

Thursday 9/12:
2 miles
Strength training
Vegan chickn salad
Choir rehearsal

Friday 9/13:
2 miles
Happy Herbivoire tempeh Chili Mac

Saturday 9/14:
Rob's birthday!
Race: Navy Air force 5 miler
Out to celebrate Rob's birthday

#veganmofo dinner: baked potato, quiche, broccoli & corn


Something about going back to school makes me crave comfort fall foods. Here, I topped my baked potato with spinach tofu quiche, broccoli, and a sprinkle of daiya mozzarella vegan cheese.

A side of corn on the cob nods to summer, this frsh, sweet stuff won't be around much longer!

Tofu crab cake sandwiches with eggplant salad

Thursday:
Run 2 miles
Cross train & weights
Choir practice, plus two tutoring sessions, so dinner is leftovers on Thursdays from now on!

Friday:
Run 7 miles
Eggplant ciabatta sandwiches with watermelon

Saturday:
Rest day 
Veggie burgers & corn

Sunday:
Ren Faire

There's something about loving where you live.

I just love our yard, and each season, find beautiful things in it.  The previous owners kept the landscaping meticulously, but I love things that grow naturally.

I'm currently listening to Dress your family in denim and courdory by David Sedaris, and reading Just Kids by Patti Smith, and The Curiosity by Stephen Kiernan. Also reading books by Myra and David Sadker on gender equity for the dissertation, and I have so many books stacked up on my kindle it's crazy...

Classes start in a week, so I'll be in and out of my office getting ready.
