Some of the meals this week are from the newest addition to my cookbook library: Mayim Balik's Mayim's Vegan Table. This lovely book was given to me by one of my math students at the college, a total surprise, and a really nice one.  The student even included a special note for me in the front of the book, which I just loved.  It's really amazing to know that you've made an impact on someone- that is the best part about teaching.


Below is a picture of the noonish breakfast I ate on Saturday- a tofu egg-less salad sandwich with avocado and some sweet potato tots.  Also included in the picture are the Lost in Running medal I earned on Friday, and the toy Rob won for me on our date Friday night.


Speaking of races, I was finally able to add my new sticker to the bumper of my car!

Fundraising for PCRM

I am currently about halfway through my training for March's Rock and Roll Half Marathon, and for the most part, feeling pretty good about it! As both a vegan, and a runner, I have to pay careful attention to my body, and what I eat. I thought it might be cool to do a little fundraising for the Physicians Committee for Responsible Medicine, whose research initially prompted me to go from being a lacto-ovo vegetarian to a vegan. Since becoming a vegan, I have felt better than I have in years, and now that I'm a runner, too, I think I can do just about anything!

When you've already done the ONE thing on your to-do list you actually wanted to do...

Today is Monday, May 13.  The Spring Semester is over.  My grades are in.  Here is my to-do list:


Gah.  The one thing on it that I actually WANTED to do on it I've already done!

Do notice, though, the second item.  Yes, that's right.  I am done writing my comps.  I am ahead of schedule, and am submitting today.


That is, if this silly system lets me!

Sigh... Processing...


Ah-ha!  Submitted!  Now I can cross that off my list!


Oh, Goody.  Now I get to clean my house.  Hooray....

At least this is what I have to look forward to when I am done- I've been putting off reading this so that I could reward myself when I submitted my Comps.
