Vegan MoFo Buddha Bowl

Let us raise a cheer for the Buddha Bowl!
A Buddha Bowl is a complete combination of vegetables, carbs, and protien generally served with a grain (although if you are limiting your calories, you can leave out the grain).
A Buddha bowl is a simple, yet complete meal in a single bowl.  Whenever I eat it, I imagine I am a Tibetan monk, carrying my wooden bowl in the pouch of my robe as I travel, seeking enlightenment through meditation.
Here is how I assembeled my bowls tonight, although I frequently vary it according to what I have in my kitchen, and what is in season. For each step, I list alternatives you can try.

First, I put a layer of brown rice Iin the bottom of the bowl. Any type of grain works here, rice, barley, couscous, quinoa, etc.

Now some veggies. Tonight I have roasted cubed sweet potatoes, and steamed broccoli and asparagus. Regular potatoes and carrots also work, as do any kind of green: kale, green beans, spinach, etc. Basically, you want to cover your rice with a layer of vegetables.

My protien tonight is some chickpeas I roasted with some curry seasonings. Any beans work here, as does tofu, tempeh, or faux meat (like gardein products).

To top it all off, I added a drizzle of sunflower butter. Tahini is also nice here, peanut or almond butter works in a pinch. You can also try a light drizzle of your favorite salad dressing. I also added a small pinch of my favorite condiment of the moment, some Lavender salt from Eatwell Farms.

While I was putting together our dinner bowls, I also made lunches for tomorrow. I love recycled jars for lunches, don't you? They portion out so well, and are very easy for my husband to carry to work on his motorcycle. I find it is much easier for me to encourage him to eat healthy, vegan foods for lunch if I just make his lunches portable!

Plan August 4 - 10

Monday
Run
Hella vegan wings (for Mia) & Daiya vegan pizza

Tuesday
Walk
Yoga
Sonoma tofu salad (for Mia)

Wednesday
Run
Winesday @ Annie's house

Thursday
Walk
Vegan Shepherd Pie (for Tina)

Friday
Run
Pizzagania (because Mia's boyfriend only eats three things, and this has pizza in the title, so maybe he will give it a go?)

Saturday
Walk/ Run if I missed one
Veggie burgers and corn

Sunday
Breakfast for dinner

As you can see, I took requests from Mia and Tina this week. I figure, it's only fair, since Mia will be headed up to college soon, that I fix her favorite meals. So, we have some favorites on the list.

This week will be rather busy, as I am teaching my LEGO class at the kids college all week, and will have to do my walks and runs in the afternoons. Yuk. Cross your fingers for me that it won't be too hot or humid. A girl can dream. We are now in week 2 of my return to training, and if I'm able to complete all three runs, I'll pass my goal of collectively running 15 miles in two weeks.

My dissertation research is really trucking along! I have already conducted 3 interviews, and have 3 more scheduled. I started writing Chapter 2, and hope to have that done by pre-semester meetings.

As for pleasure reading, I am tackling Umberto Eco's In the name of the Rose, and on a slightly lighter note, on my kindle I am reading Ray Bradbury's Dandelion Wine

Well, This is a daunting meal plan week!  The semester is over, and summer semester starts this week, but I'm only teaching two online courses, so I'm feeling rather free.
I'm taking some rest this week, after my half on Sunday.  Will continue to do Yoga and Pilates, even though Cari won't be joining me this week! :(

So I pulled out some recipes I want to try.
CK- I'm testing again this week for Cupcakes and Kale
KP HHL- from the book 365 Vegan Smoothies by Kathy Patalsky of Healthy-Happy-Life.  I'm starting at page 1, and seeing what happens.
SV- The Sexy Vegan's Happy Hour at Home.  These seem perfect for Winesdays.  I'd like to try a few of these this summer.
RR PV- Robin Robertson's Party Vegan
ODV- One Dish Vegan, also by Robin Robertson
HHLL- My tried and true, Happy Herbivore Light and Lean

I'm not really sure what we're doing for Memorial Day yet.  In years past, we've ridden in the Rolling Thunder ride to DC. We'll see what we do this year!

Otherwise, I'll be working on my Literature Review for my dissertation.
